Law Uy Visayan Vegetable Soup


Law-uy is a vegetable soup dish popular in Mindanao and Visayan region, it looks like dinengdeng or laswa but this dish is different. Saluyot, Alugbati leaves, Okra are the main vegetables. Also patola, taro, and lemongrass are in the main ingredients but we do not use them in this recipe but you are free to use them if you like. Just add the taro and lemongrass after adding the water and follow the same in the video.

Ingredients:

  • Dilis (fried)
  • 2 pieces Eggplant sliced
  • 1 cup cubed kalabasa (squash)
  • 5 pieces long string beans cut into 2-inch length
  • 1 1/2 cup Saluyot leaves
  • 1 cup Malunggay leaves (moringa)
  • 1 1/2 cup alugbati leaves
  • 2 pieces of medium tomato
  • 1 sachet seasoning granule
  • 1 tbsp olive oil
  • 5-10 pieces okra
  • 2 medium onion
  • 4 to 5 cups of water
  • Salt and pepper to taste


PROCEDURE:

  1. Heat frying pan over low heat and add dried dilis. Then set aside
  2. In a casserole add oil then sauté onion and tomato
  3. Pour 5 cups water and bring to a boil over medium-high heat
  4. Seasoned it with salt and seasoning granule
  5. Add the dilis (dried fried fish)
  6. Throw in the squash first and cook for at least 3 minutes
  7. Add the string beans, okra, and eggplant. Simmer for another 5 minutes
  8. Put all green leafy vegetables (Alugbati, Saluyot, And Malunggay). Stir to mix
  9. Turn off heat and ready for serving
